CE015: Mushroom
CE015 is the manifestation of our exploration towards umami flavors in cocktails. Heavily influenced by Japanese cuisine, the cocktail highlights clean and refreshing flavors, paying tribute to kaiseki. Sake, sous vide with shiitake and shimeji mushrooms, acts as the base of the drink while bitters infused with katsuobushi and sage were added to deepen its complexity. The umami flavors are then rounded out by incorporating flavors of apple and genmaicha tea.
Enjoy CE015 on the rocks for pronounced notes of mushroom tea and spiced apple. Alternatively, it may be enjoyed with iced green tea for a more balanced take, with notes of green tea and mushroom-apple tart.

Serving Suggestion
On The Rocks: On The Rocks: Pour approximately 3 oz. of the cocktail into a Rocks Glass over ice. (Notes: Mushroom Tea, Spiced Apple)
Alternative Method: Pour 2 oz. of the cocktail into a Rocks Glass with ice. Add 1 oz. of iced green tea (2:1 ; Cocktail : Iced Green Tea). Stir 3–4 times to incorporate. (Notes: Green Tea, Mushroom-Apple Tart)
