CE021: Asim
CE021 is a special release done in collaboration with Biter alongside the launch of their first issue. Aptly named Asim (Tagalog word for sour), the cocktail was made with the idea of exploring how sourness is put into a drink, utilizing different souring agents.
Various ingredients were used to create the drink–from tart fruits to acids to play around with its overall flavor and acidity. We created a tincture from tamarind as well as an oleo saccharum with lemon peels. Lastly, the drink features a shrub made with duhat, a local plum variety, pink peppercorns, and rice vinegar that contributes to CE021: Asim’s tanginess and vibrant color.
Enjoy CE021 on the rocks for pronounced notes of candied tamarind and watermelon shrub. Alternatively, it may be enjoyed with egg whites for a creamy take, with notes of pink lemonade and fermented berries.

Serving Suggestion
On The Rocks: Pour approximately 2.75 oz. of the cocktail into a Rocks Glass over ice. (Notes: Candied Tamarind, Watermelon Shrub)
Alternative Method: Pour 3.5 oz. of the cocktail into a shaker (Boston) with 1.5 oz. of egg whites. Give the mixture a dry shake (without ice) for 15 seconds. Add ice to the shaker and perform a hard shake (with ice) for 15–20 seconds. Double strain the cocktail (Hawthorne and Fine Strainer) into a Coupe Glass. (Notes: Pink Lemonade, Fermented Berries)
